Sustainable Procurement
In response to the concept of low-carbon dining, Sky Lounge incorporates a high proportion of locally sourced ingredients from Nantou into its menu. These include shiitake mushrooms, loofah, tomatoes, and Red Jade chicken from Yuchi, green plums from Shuili, sweet potatoes from Zhushan, and bamboo shoots, zucchini, passion fruit, baby corn, wild vegetables, and Balai eggs from Puli. The seafood dishes prioritize sources with traceable certifications, with most ingredients currently sourced from Penghu. Through thoughtful menu design and ingredient selection, Sky Lounge actively supports sustainable procurement practices.
Food Preservation and Circular Economy
Sky Lounge offers both breakfast and dinner in set menus, ensuring guests are well-fed without unnecessary waste. Minimal food waste generated is converted into soil conditioners using a food waste composting machine. These conditioners are used as fertilizer for the hotel grounds and are also distributed to local farming partners. In turn, Fleur de Chine purchases crops grown by these local farmers, supporting eco-friendly agriculture and bringing high-quality local ingredients back to the table. This initiative creates a complete cycle of food waste recovery and reuse.
Healthy Eating
From a focus on light seasoning to emphasize the natural essence of ingredients, to breakfast menus featuring fruits, vegetables, and wholesome grains, Sky Lounge ensures balanced and nutritious dining experiences. Dinner menus include salads sourced from local farms, grilled dishes featuring locally-grown vegetables, and fruit-based desserts to conclude the meal. The chef intentionally incorporates the concept of healthy eating into the menu design, allowing diners to enjoy delicious meals that are both balanced and guilt-free.
Environmental Protection and Recycling
Fleur de Chine upholds its commitment to environmental sustainability by refraining from providing single-use tableware in guest rooms and restaurants. Instead, high-quality reusable tableware, glassware, and placemats are used to deliver an elevated dining experience. Additionally, all waste generated from restaurant operations is carefully sorted and recycled. Sky Lounge also actively participates in the hotel’s "DIY Recycling Reuse Workshops," where guests can repurpose discarded wine bottles into artistic nightlights, putting waste recycling into action.
